Ingredients
- Amber Frosting:
- 1 1/3 cups of flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1 egg beaten
- 2 tablespoons sugar
- 1/2 cup molasses
- 6 tablespoons melted butter
- 1/3 cup boiling water
- 3 tablespoons of hot water
- 1 cup light brown sugar
- 1 egg white (unbeaten)
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon salt
- 1 teaspoon vanilla
Preparation
Step 1
1. Grease muffin pan. Preheat oven 350.
2. Sift flour baking powder, baking soda, salt, ginger, cinnamon and cloves 3 times.
3. Combine beaten egg, sugar, molasses and melted butter.
4. Add flour mixture to molasses mixture about one quart at a time, alternating with boiling water (in three times).
5. Fill cup 2/3 and bake 25 minutes.
6. Prepare the icing by stirring sugar and water together and boil in covered pan until sugar is dissolved.
7. Place other ingredients in small mixture bowl and add hot syrup.
8. Beat at high speed until frosting is right consistency to spread (about 3-4 minutes).
9. Add vanilla while beating.
Coffee or lemon frosting would also be good with cup cakes.
