SPICED CAKE (Five Roses)

Ingredients

  • 2 1/2 cups of flour
  • 2 teaspoons baking powder
  • 1 teaspoon ginger
  • 1/2 cup shortening or butter
  • 1 cup of molasses
  • 1 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 2 eggs well beaten

Preparation

Step 1

1. Mix flour, baking powder and ginger.
2. Beat shortening with brown sugar, then add molasses, salt, nutmeg and cinnamon.
3. Pour boiling water on baking soda and add to cream mixture.
4. Incorporate dry ingredients and mix well.
5. Add eggs and mix well.
6. Pour in a greased and floured 9x13 cake pan.
7. Bake at 325 from 50-60 minutes.
