Ingredients

  • icing:
  • 2 cups of flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon of salt
  • 1 cup vegetal oil
  • 2 cups of sugar
  • 4 eggs (adding one by one)
  • 2 cups of grated carrots
  • 1 can of crushed pineapple
  • 1 cup of chopped walnuts
  • 1 cup dry raisins
  • 3 cups of icing sugar
  • 1/2 cup of butter
  • 4 ounces of cream cheese Philadelphia
  • 1 teaspoon vanilla

Preparation

Step 1

1. Sift flour baking powder, baking soda, cinnamon and salt.
2. Cream butter and gradually add sugar.
3. Slowly incorporate flour mixture, alternating with oil.
4. Add carrots, pineapple, walnuts and dry raisins.
5. Pour in a greased pan.
6. Bake at 350 for 15 minutes. Heat at 325 and bake another 35-40 minutes.
7. Make the icing by combining all ingredients.
