Ingredients
- 1 pound radishes, cut into bite-sized pieces
- 1 handful basil, torn by hand or chiffonade
- Sea salt
- 2 1/2 ounces shredded Parmesan cheese
- 2 tablespoons lemon juice
- 3 tablespoons extra virgin olive oil
- 2 handfuls arugula

Directions
Combine radishes with basil and salt, mix for 30 seconds to incorporate.
Add cheese and continue to mix until Parmesan starts to get creamy, about 1 minute.
Add lemon juice, oil, and arugula. Mix well.
