Melt in Your Mouth Sandwich Cookies
These cookies are simply the best, flakiest, sugary cookie there is. None can beat it, and they are the first gone at any gathering!
- 1 cup butter, softened
- 1/3 cup whipping cream
- 2 cup flour
- 1/2 cup butter, softened
- 1 1/2 cup powdered sugar
- 2 tsp vanilla
- desired food coloring
Combine butter, cream, and flour. Mix well. Cover and chill for 2 hours. Divide into thirds and let one portion stand at room temp for 15 minutes. Keep other dough chilled until ready to use.
On floured surface, roll out dough to 1/8" thick. Cut with small cookie cutters (about 1 1/2 - 2 inch cutters) Coat each cookie, both sides, with sugar. Place on un-greased baking sheet, and prick each cookie with a fork several times. Bake at 375 degrees for 7-9 minutes. Be careful not to burn.
Cream butter and sugar, then add vanilla and desired food coloring. Spread icing on cookies, and then top with another cookie, to make a sandwich. Serve and enjoy!
