Zucchini and Tomatoes with Cheese


A delicious side dish, juicy and cheesy. Especially yummy with fresh veggies from the garden!

  • 4 small zucchini
  • 2 large tomatoes
  • 1/2 cup chopped onion
  • 3 cloves minced garlic
  • 1/2 tsp salt
  • 1/2 tsp basil
  • 1/8 tsp pepper
  • 3 tbsp olive oil
  • 8 oz shredded fontina cheese
  • 1/4 cup shredded Parmesan cheese


Servings 4


Step 1

Heat oven to 350. Grease a 3 quart baking dish.

Cut ends from zucchini and tomatoes and cut into 1/2 inch rounds. Quarter all pieces. Combine zucchini and tomatoes, sprinkle with onion, garlic, salt, basil, and pepper. Toss to blend. Drizzle with olive oil and toss again to coat.

Pour veggies into baking dish. Bake for 25 minutes. Top with cheese and cont banking for 10-15 minutes.
