Ingredients
- 1 C. shelled fresh peas
- 2 T. olive oil
- 1/2 C. prosciutto, thinly sliced
- 1 1/2 lb. fettucine, fresh or dried
- 6 T. softened butter
- 1/2 C. fresh grated parmesan cheese
- Black pepper
Preparation
Step 1
1. Add peas to pot of boiling salt water, bring back to boil and simmer 2 minutes. Drain and plunge into iced water to cool.
2. Heat oil in pan, add prosciutto and gently saute for 1-2 minutes.
3. Cook pasta until al dente according to instructions. While pasta is cooking, drain the peas and add to prosciutto.
4. Drain pasta and combine with prosciutto and peas, butter, parmesan cheese, and black pepper. Toss quickly over heat and serve immediately.
