Ingredients

- 3 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 6 tbsp. unsalted butter, room temperature
- 3/4 cup creamy peanut butter
- 1 cup sugar
- 2 tsp. vanilla extract
- 3 large eggs
- 1 cup mini semisweet chocolate chips
- additional chocolate to melt for drizzling
Preparation
Step 1
Preheat oven to 350°. Line cookie sheet with parchment paper.
Combine flour, baking powder and salt in medium bowl. Stir briefly to combine. Set aside.
In another bowl, combine butter, sugar, and peanut butter until smooth and fluffy. Blend in the vanilla. Blend in each egg one at a time.
Add dry ingredients by thirds, mixing after each addition until just incorporated. Stir in chocolate chips.
Split the dough in halves. On prepared sheet, shape each half into a log, spacing each log about 3 inches apart. Bake for 30 minutes.
Remove from oven (keeping it on) and let cool for 10 minutes. Cut diagonally into slices and place cut side down on bare baking sheet. Bake 5-10 minutes each side, depending on how crunchy you like your biscotti. Remove and transfer to a cooling rack.
Drizzle with additional melted chocolate if desired.
