- Frosting:
- 3 c flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 sticks unsalted butter
- 2 c sugar
- 6 eggs
- 2 tbsp lime zest
- 1/2 c milk
- green food coloring, optional
- lime wedges, optional, garnish
- 1 c butter, softened
- 6 tbsp strawberry syrup
- 1 tsp vanilla
- 3 c powdered sugar
- 2 tbsp tequila, optional

Step 1
Line cupcake pans with cupcake liners. Sift flour, baking powder and salt together in bowl and set aside. In bowl of stand mixer, cream butter and sugar for about 2 mins. scrape down and add eggs one at a time. After adding all the eggs, scrape down bowl and add the mild, driy ingredients and the live zest. Mix on low until well incorporated. Scrape down the bowl again and turn up from low speed to med speed for about 20 sec. Mix in green food coloring. Fill cupcake liners about 3/4 full with batter. Bake for 20-22 mins. Cool the cupcakes completely on wire rake before frosting. Frosting: Place soft butter, strawberry syrup, tequila and vanilla in lrg bowl. Using mixer, beat on high speed until mixture is light and fluffy and lumps have disappeared. Add powdered sugar and mix on low speed to blend. Frost cupcakes using piping bag and garnish with lime wedges or strawberries.
