Ingredients
- SALAD
- 1 pkg (7 oz.) tri-colored rotini pasta
- 1/2 cup chopped green pepper
- 1/2 cup chopped red pepper
- 1 small red onion, sliced
- 1 (2 oz) can sliced black olives
- 1/4 cup minced fresh parsley
- DRESSING
- 1/4 cup parmesan cheese
- 1/2 cup olive oil
- 1/4 cup cider or red wine vinegar
- 1 garlic clove
- 1 1/2 tsp ground mustard
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp salt
- dash of pepper
Preparation
Step 1
Cook pasta according to directions, drain and let cool. Place in a large bowl; add the next 5 ingredients. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Pour over salad; toss to coat. Cover and chill for 8 hours or overnight.
