Ingredients
- Cakes:
- 1 1/2 cups flour
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2/3 cup brown sugar
- 1/3 cup sugar
- 1 stick butter, room temp
- 1 tsp vanilla
- 1 egg
- 1 cup buttermilk
- 8 oz (2 cups) chocolate chips
- Filling:
- 2 1/4 cups powdered sugar
- 5 tbsp butter, room temp
- 3 tbs milk
- 1 tsp vanilla
- pinch salt
Preparation
Step 1
Preheat oven to 325 degrees. Grease and flour wells of whoopie pie pan.
In a bowl, whisk together flour, baking powder, baking soda and salt.
In a mixer, beat together brown sugar, sugar and butter until fluffy. Add vanilla and egg, beat well. Add flour mix in 3 parts, alternating with buttermilk, mixing well in between. Beat for one minute on high. Fold in chocolate chips.
Fill wells with 1 1/2 tbsp each of batter. Tap the pan to distribute batter evenly. Bake 8-12 minutes. Let cool on a wire rack for 5 minutes, then remove from pan to cool completely. Repeat for rest of batter.
To make filling, beat butter until fluffy. Add powdered sugar, milk, vanilla and salt, beating well to combine. Increase speed and beat well for 1 minute.
To assemble: spread or pipe 2 tbsp filling onto flat side of half the cakes. Top each with remaining cakes, domed side up.
