Beets - Roasted with Honey and Dijon

Ingredients

  • 4 large red or golden beets, ends trimmed, peeled and quartered
  • 1 tablespoon olive oil
  • Kosher salt, to taste
  • 1/2 teaspoon fresh-ground black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Juice of 1 orange
  • 2 tablespoons red wine, or rasberry or balsamic vinegar

Preparation

Step 1

Preheat oven to 400 degrees.
Toss beets with olive oil, salt and pepper and place in a nonreactive roasting pan.
Bake, uncovered, 40 minutes in the center of the oven until almost tender. While the beets are cooking, combine the Dijon mustard,
honey, orange juice and vinegar in a nonreactive small mixing bowl. Pour over the beets and bake 10 minutes longer until glazed.
