Cheddar Scalloped Sweet Potatoes

Ingredients

  • 3 large sweet potato -- peeled and sliced
  • 2 cups half and half
  • 2 cloves garlic -- chopped fine
  • fresh nutmeg -- to taste
  • salt and pepper -- to taste
  • 1 1/2 cups grated cheddar cheese
  • 2 tablespoons butter -- cut in 1/4" pieces

Step 1

Preheat oven to 350F. Peel and slice sweet potatoes 1/4 inch thick. In sauce pan combine 1/2 and 1/2, garlic, grated nutmeg, salt, and pepper. Bring to boil over moderate heat.

Butter oval gratin dish and layer potatoes and cheese (reserve 1/4 cup cheese for top). Pour cream mixture over top and sprinkle remaining cheese on top. Dot top with butter pieces.

Bake for about 35-40 minutes until golden and bubbling. Remove and let rest about 5 minutes before serving.
