New England Clam Chowder

Ingredients
- 3 slices bacon
- 1 cup finely chopped onion
- 2 3 cups cubed potatoes
- 1 tsp salt
- Dash pepper
- 1 1/2 cups water
- 1 pt. shucked fresh clams,
- chopped coarsley or 3 cans chopped
- clams including juice.
- 2 cups Half & Half
- 3 tbsp.butter

Preparation
Step 1
Chop bacon coursely. Saute' bacon in large skillet until crisp. Add onion and cook until soft. Add cubed taters
salt, pepper and water. Cook uncovered
15 minutes or until taters are fork tender. Add clams and juice and half and half to kettle, mixing well. Heat until boiling. Add butter and serve.
Can be made ahead.( Foot note I added celery 1/2 to a cup with the onions just to add to the taste and to beef it
up a touch!
