RAISIN SCONES (Sunbeam)

Ingredients

  • 2 cups of flour
  • 1/4 cup of sugar
  • 1 tablespoon baking powder
  • 1 teaspoon of salt
  • 1/3 cup of butter
  • 1/4 cup of currants
  • 1/2 cup of milk
  • 2 eggs
  • 1 tablespoon of sugar

Preparation

Step 1

1. Combine flour, sugar, baking powder and salt. Mix well.
2. Cut in butter with pastry blender until mixture resembles coarse meal.
3. Stir in currants and add milk and 1 egg plus 1 yolk.
4. Beat until all ingredients are moistened.
5. Turn dough on floured surface to 1.5 cm. Brush with beaten white and sprinkle with sugar.
6. Cut into 12 pie-shaped wedges, and do not separate.
7. Place on ungreased baking sheet.
8. Bake at 425 12-15 minutes or until golden.
