Ingredients

  • Meringue:
  • 1-1/2 cups Sugar
  • 6 tblsp Cornstarch
  • 1/4 tsp salt
  • 3 egg yokes
  • 3 cups buttermilk
  • 3/4 cup raisins
  • 3 tblsp lemon juice
  • 1 tblsp butter or margarine
  • 1 tsp vanilla extract
  • 1 pastry shell (9 inch), baked
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 6 tblsp sugar

Preparation

Step 1

Preheat oven to 350 degrees

In saucepan combine:
Sugar
Cornstarch
salt

Beat together:
Egg yokes
Buttermilk

Stir egg mixture into dry mixture in sauce pan. Mix until it is smooth.

Add the raisins and lemon juice.
Cook and stir this over medium heat until mixture comes to a gentle boil.
Cook and stir 2 minutes longer.

Remove from heat; stir in butter and vanilla.

Pour into pie shell.

MERANGUE:

Beat in mixing bowl:

Egg whites
Cream of Tartar
Until soft peaks form
Keep beating and Gradually add sugar
until stiff peaks form.

Spread over hot filling and be sure to seal the edges.

Bake at 350 degrees for 12 to 15 minutes or until golden brown.

Cool, serve, store pie in refrigerator.
