Ingredients
- 1 C uncooked brown rice
- 1 lb lean ground turkey
- 1 large onion, chopped
- 1 can (14 1/2 oz) diced tomatoes with mil green , undrained
- 2/3 C picante sauce
- 2 tsp chili powder
- 2 tsp ground cumin
- 1 can (16 oz) kidney beans, rinsed and drained
- 4 oz lo fat shredded cheddar cheese, divided
Preparation
Step 1
- Cook rice according to package directions
- Cook turkey and onion over medium heat until meat is no longer pink, drain
- Stir in tomatoes, picante, spices and heat
- Remove from heat; stir in beans, 1/2 C cheese and cooked turkey; transfer to sprayed 13X 9 pan 9 or 2 8 in. ones to freeze
- Bake at 350 till heated through (about 30 min); sprinkle with remaining cheese and heat 5-10 min until cheese melts
