Classic Caesar from Mon Petite in Denver

Ingredients

  • 1 large head Romain lettuce.
  • 1 cup crisp croutons.
  • 1 cup freshly grated Parmesan cheese
  • 1/4 teaspoon salt
  • 2 cloves garlic
  • 5 anchovy filets
  • 1/2 teaspoon dry mustard
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 eggs, coddled
  • 1/2 teaspoon Worcestershire sauce
  • juice of 1 lemon
  • freshly ground pepper

Preparation

Step 1

1. Tear romaine into pieces and place in a large salad bowl. Top with croutons and cheese.
2. Combine salt, garlic, dry mustard and anchovies in a small bowl and mash. Add the oil a little at a time stirring constantly. Add vinegar, eggs, lemon juice, and Worcestershire sauce.
3. Pour dressing around inside edge of salad bowl. Poss well with greens. Grind pepper all over.
