BEEF BOURGUIGNON

Ingredients

  • 3 lbs of palette (trimmed and cubed)
  • 2-4 slices of bacon cubed
  • 4 tablespoons of butter
  • 1 cup of minced onion or 25 small onions
  • 1 can of consommé Campbell
  • 3 tablespoons of tomato paste
  • 3 tablespoons of flour
  • 2 tablespoons of sherry
  • 1 cup of red wine
  • 1 teaspoon of fresh parsley
  • 1/2 teaspoon of fresh thyme
  • 1 cup of minced mushrooms (optional)

Preparation

Step 1

1. Brown meat in the bacon and butter mixture for about 10 minutes.
2. Add salt and pepper.
3. Dilute by stirring the tomato paste and flour in the consommé.
4. If using mushrooms, sauté in the same mixture.
5. Take the meat out and pour the consommé mixture until it starts to boil.
6. Add wine, sherry and spices.
7. Return the meat and cook in the oven at 300 for 1-½ hours.
