Chicken - Instant Pot Lemon Chicken with Garlic

Ingredients

  • 6-8 boneless chicken thighs
  • sea salt and pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp red chili flakes
  • 2 T olive oil
  • 1/2 small onion chopped
  • 4 garlic cloves sliced or minced
  • 1 lemon - juiced
  • zest half of the lemon
  • 2-4 tsp Italian seasoning
  • 1/3 c chicken broth

Preparation

Step 1

1. Season the chicken with salt, pepper, garlic powder, paprika and chili flakes
2. Saute chicken in instant pot for 2-3 minutes on each side until golden brown. Remove.
3. Melt butter in instant pot, add onions and garlic. Add lemon juice to deglaze and cook for 1 minute. Add Italian seasoning, lemon zest and chicken broth.
4. Place chicken back in pot, lock the lid and turn valve to seal. Set pressure cook timer for 7 minutes. It will take 5-10 minutes to come to pressure and start counting down.
5. Remove chicken. Mix 1 tsp cornstarch and 2 tsps cold water. Add to mixture to thicken.
