Loaded Cauliflower

  • 1 large head cauliflower, cut into bite size pieces
  • 6-8 strips crisp bacon, crumbled into pieces
  • 6 tablespoon chopped green onions or chives
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 cups shredded Colby Jack cheese

Preparation

Step 1

Preheat oven to 425 degrees F. In a large pot, boil water and cook cauliflower for 8-10 minutes. Drain and let cool.

In a large bowl, combine mayonnaise, sour cream, `1/2 of bacon, 1/2 of onions, 1 cup cheese, and cauliflower, mixing together well. Spoon into 9 x 13 baking dish and cover with remaining ingredients. Bake for 15-20 minutes until cheese is melted.
