Ingredients

  • 1 tbs. olive oil
  • 1/2 cup onions finely chopped
  • 1 (14.5 oz) can diced tomatoes with basil, garlic and oregano
  • 1 c. mushrooms chopped
  • 1/2 Tbs. sugar
  • 1/2 tsp. salt
  • 1 tsp. black pepper
  • 1 spaghetti squash
  • 1/2 c. mozzarella cheese

Step 1

In a. skillet, add olive oil and onion; saute' until onion is tender. In a saucepan, add diced tomatoes, mushrooms, onion, sugat and salt and pepper. Bring to a boil and reduce heat. Let simmer for 45 min. - 1 hour; stir occasionally.

Preheat the oven to 375. In a baking dish, fill 1/4 way full of water. With a fork poke holes into squach and place squach in baking dish. Place in oven for 1 hour. Once squash is tender, cut squash in half, remove seeds and with a fork rake squash out ( it should look like spaghetti) Pour tomato sauce over squash and top with mozzarella cheese.
