Arugula and Orange Salad with Grapefruit-Poppy Seed Dressing

Ingredients

  • 1/2 c fresh grapefruit juice
  • 1/3 c canola oil
  • 1 tsp salt
  • 1 tsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/2 tsp ground black pepper
  • 1-1/2 tsp poppy seeds
  • 1 (4 oz) bag fresh baby arugula
  • 4 plum tomatoes, seeded and diced
  • 2 avocados, halved, pitted, peeled, and sliced
  • 1 grapefruit, peeled and sectioned

Preparation

Step 1

In a medium bowl, whisk together grapefruit juice and next 6 ingredients. Stir in poppy seeds.

Among serving plates, divide arugula and remaining 4 ingredients. Drizzle with grapefruit juice mixture.
