Jalapeno Poppers w/ Pimento Cheese

Ingredients

  • 2 oz. cream cheese, softened
  • 1 Tbsp. mayonnaise
  • 1 (4 oz) jar diced pimiento peppers, drained
  • 1 cup shredded sharp cheddar cheese
  • 3/4 tea. salt, divided
  • 1/4 pepper
  • 1/8 tea. garlic powder
  • 2 tea. canola oil
  • 6 medium jalapenos, halved lengthwise
  • 4 strips bacon, cooked and crumbled
  • 2 Tbsp. chopped green onion

Preparation

Step 1

In a medium bowl, combine cream cheese, mayonnaise, and pimientos, stir well. Add cheddar, 1/4 tea. salt, pepper and garlic powder.

In a 10" cast iron skillet, heat oil over medium heat. Add peppers, cut side down. Cook until edges are lightly browned, approx. 2 minutes. Remove from heat,. Turn peppers over, sprinkle with remaining 1/4 tea. salt. Spoon approx. 1 Tbsp.cheese mixture into each pepper half,.

Place skillet in oven, and bake until peppers are tender and cheese melts, approx. 15 minutes. Remove from oven; sprinkle with bacon and green onions.
