Pork Tenderloin Cutlets with Tonka Sauce

Ingredients

  • Pork
  • 2 small or 1 large pork tenderloin
  • egg
  • panko crumbs
  • olive oil
  • Tonka Sauce
  • 1 cup ketchup
  • 1/2 cup worcestershire sauce
  • 1/2 cup sake
  • 2 tbs fresh ginger root, minced
  • 3 tbs fresh garlic, minced
  • 1/4 cup mirin (rice cooking wine - found in oriental aisle)

Preparation

Step 1

For sauce
Put all sauce ingredients in stainless steel saucepan and bring to a boil over medium heat stirring occasionally. Reduce to a simmer for 25 to 30 minutes, skimming any foam that rises to the top.
Pork
Cut tenderloin into 2: slices. Place slices cut side up between plastic wrap and punt until thin (cutlet style). Salt and pepper cutlets and dip into egg beaten with 1 tbs cold water then coat both sides with panko.
Saute cutlets in oil until browned on both sides (do not overcook). Put on serving platter and brush both sides with sauce while warm. Serve at once.
