Ingredients
- 1 Red Bell pepper, halved and seeded
- 1 jalapeno, halved and seeded
- 1 T EVOO
- 6 10 Inch Flour Tortillas
- 6 OZ goat cheese, at room temperature
- 3 T Salsa
- 3 T cilantro
Preparation
Step 1
1. Prepare a medium fire in grill
2. Brush peppers with EVOO
3. Grill peppers until tender and lightly charred, about 7 minutes, turning as needed. Remove to cutting board and finely chop.
4. Cool grill to low
5. Lightly coat one side of 3 tortillas with EVOO. Place on work surface. Spread 2 Oz goat cheese on each, followed by 1/3 of the chopped begetables and 1 T of salsa and cilantro. Place together firmly. Brush top of tortilla with EVOO.
6. Grill each quesadilla until cheese is melted and tortilla is lightly toasted. Flip and grill on other side.
