Honey-Glazed Chicken

The rich honey glaze gives each luscious piece a spicy tang. This dish is simple enough to prepare for a family dinner and delightful enough to serve to guests.

Ingredients

  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 4 pounds skinless chicken pieces
  • 1/4 cup butter, melted
  • 1/3 cup packed brown sugar
  • 1/3 cup honey
  • 1/3 cup lemon juice
  • 1 1/2 Tablespoons soy sauce
  • 2 1/4 teaspoons curry powder

Step 1

In a bowl or bag, combine flour, salt and cayenne pepper; add chicken pieces and dredge or shake to coat. Pour 4 tablespoons butter into a 13" x 9" x 2" baking pan: place chicken in pan, turning pieces once to coat. Bake, uncovered, at 350 for 30 minutes. Drain fat from chicken (if you used skinless chicken, there shouldn't be much). Combine brown sugar, honey, lemon juice, soysauce, and curry powder; pour over chicken. Bake 45 minutes more or until chicken is tender, basting serveral times with pan drippings.
