Tortilla Soup

You can add other ingredients and it still tastes the same.
Cook the chicken ahead of time but add it later on; otherwise it tastes overcooked and flavorless.

Ingredients

  • 1 lb. shredded, cooked chicken
  • 1 (15 oz) can whole peeled tomatoes, mashed
  • 1 (10 oz) can enchilada sauce
  • 1 medium onion, chopped
  • 1 (4 oz) can chopped green chiles
  • 2 cloves garlic, minced
  • 2 cups water
  • 1 (14.5 oz) can chicken broth
  • 1 tea. cumin
  • 1 tea. chili powder
  • 1 tea. salt
  • 1/4 tea. pepper
  • 1 bay leaf
  • 1 (10 oz) pkg. frozen corn
  • Options: sour cream, lime, avocados, and cheese

Preparation

Step 1

Place all ingredients in a 4-5 qt. crock pot. Cover, and cook on low for 8-9 hours or on high for 4-4 1/2 hours.
