Pork Belly Tacos

Ingredients

  • 3/4 bag Shredded Cabbage
  • 1 container Fresh Mango & Pineapple Salsa or Pineapple Salsa
  • 1 tsp Cumin
  • 6 small Corn Tortillas
  • 12 oz piece Fully Cooked Pork Belly
  • 1/2 container Guacamole
  • 3 Limes, sliced
  • 1 package Fresh Cilantro, chopped

Mix cabbage, salsa and cumin together, set aside. Wrap 6 tortillas in a paper towel and microwave for 1 minute. Remove from microwave and set aside to cool slightly. Add full piece of pork belly to sauté pan and brown on all sides until golden and warmed through. Remove from pan and slice into very thin slivers. Place a tortilla on a plate and spread with a layer of Guac, top with cabbage mixture, pork, lots of lime and cilantro; fold over and eat right away.
