Butterscotch Tapioca

Ingredients

  • Warm in sauce pan:
  • 12 oz. evaporated milk
  • 2 egg yolks
  • 2/3 cup milk
  • 3 T. tapioca
  • 1/4 t. salt
  • In another pan melt:
  • 3 T. butter
  • 2/3 cup brown sugar-cook for 4 minutes-take off heat
  • then whisk in 2t. bourbon,1t. vanilla and add the milk mixture

Preparation

Step 1

cook 3 to 4 minutes until thickened
serve with whipped cream and toffee bits
