Mom's Chicken Salsa

Ingredients

  • 3 whole chicken breasts cut up into small pieces. Diced.
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp butter
  • 1 medium onion sliced thin or diced
  • 3/4 cup salsa
  • 1 cup dairy sour cream
  • 1 cup grated cheddar
  • 1 cup grated Monterrey Jack
  • Long Grain White rice

Preparation

Step 1

Cut Chicken into pieces. Season with salt and pepper. Brown in the butter.
Remove chicken from pan and sautee onions.
In a 13x9 casserole dish, arrange chicken, top with onions, salsa, sour cream and cheeses.
Bake uncovered at 350 for 30 minutes
