Red Pepper Dip

Ingredients

  • 1 med spanish onion, sliced and chopped
  • 5 cloves garlic, minced
  • 2 tbsp olive oil
  • 3 red bell peppers, sliced and chopped
  • 2 tbsp tomato paste
  • 1 tbsp balsamic vinegar
  • French bread, sliced and toasted

Preparation

Step 1

Saute onion and garlic in 1 tbsp olive oil. Add the sliced red peppers. Cover and cook aprox 15 min or until very tender. Add the tomato paste, vinegar, 1 tbsp olive oil and salt to taste. Add 2 slices of the toasted french bread and puree in food processor. Garnish in hollow pepper. Serve with the toasted french bread or vegetables.
