TACOS - CHICKEN AND RICE

Ingredients

  • 1 lb. boneless skinless chicken breast
  • 2 T. oil
  • 1 can (13 oz.) chicken broth
  • 1 can (8 oz.) tomato sauce
  • 1 package taco seasoning mix
  • 1 can (12 oz.) corn, drained
  • 1 medium red and green pepper, cut into strips
  • 1 1/2 C. dry Minute Rice
  • 1/2 C. shredded cheddar cheese
  • Tortilla chips

Preparation

Step 1

1. Saute chicken in oil until opaque, about 2 minutes.

2. Add chicken broth, tomato sauce and taco seasoning mix. Bring to a boil; then simmer, covered, 5 minutes, stirring occasionally. Add corn and pepper. Bring to a full boil.

3. Stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork. Serve with cheese and tortilla chips.
