Potato Cheese Corn Chowder

Ingredients

  • 4 oz chopped bacon
  • 2 Tbsp Butter
  • 2 Green Onions
  • 2 tsp Thyme
  • 1/4 cup White Wine
  • 4 Cups Chicken Broth
  • 1 1/2 Cups half n half cream
  • 1 Bay Leaf
  • 3 Chopped Potaotes
  • Chopped Chives
  • 8 oz shredded Cheddar Cheese
  • 2 Cups Corn

Preparation

Step 1

Saute bacon in a soup pan, until crispy.
Add butter, green onions, and Thyme.
Add wine to deglaze pan.
Add Chicken Broth, cream, bay leaf and potatoes.
Simmer for 30 minutes or until potatoes are tender.

Slightly smash and break up some of the potatoes.

Add corn, simmer till corn is done.

Add cheese and simmer till cheese is melted.

Garnish with chives
