CRUSHED PINEAPPLE UPSIDE DOWN CAKE

Ingredients

  • 3 Tbs. unsalted butter
  • 2/3 cup packed brown sugar
  • 1 1/2 cups drained crushed pineapple, reserve 1/2 cup syrup from can.
  • Maraschino cherries
  • Walnut halves
  • 1/3 cup shortening
  • 1 tsp. vanilla
  • 1/2 cup sugar
  • 1 large egg
  • 1 1/4 cup flour, shifted
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder

Preparation

Step 1

1. Preheat oven to 350 degrees. Using a 8-inch or 9-inch round pan melt the butter in the pan. Add brown sugar, pineapple, cherries and walnuts to the pan.

2. Cream shortening, sugar and vanilla. Add egg and beat vigorously. Add dry ingredients alternating egg and dry ingredients to cream mixture.

3. Bake for 50-60 minutes, cool 10 minutes and invert pan on cake pan. Serve warm.
