PISTACHIOS AND SHRIMPS PATE

Ingredients

  • 1 pound small cooked shrimps
  • 1/2 pound of butter
  • 1-2 garlic cloves crushed
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • thyme
  • 1-2 teaspoons pernod
  • 1/3 cup peeled and halved pistachios

Preparation

Step 1

1. Melt half of the butter; add garlic and half of the shrimp mixture.
2. Heat but do not cook. Add salt, pepper, thyme and pernod.
3. Pass in blender.
4. Warm the remaining shrimps in remaining butter and adjust spices to taste.
5. Stir slowly until warm and mix the whole thing with half of the pistachios.
6. Pour in a pate pan and cover with plastic and aluminum foil.
7. Refrigerate.
