Jar: Pumpkin Cheesecake in a Jar

Ingredients

  • 12 oz. cream cheese
  • 3/4 cup sugar
  • 1 cup canned pumpkin
  • 2 eggs, beaten
  • 2 egg yolks, beaten
  • 2 Tbsp. flour
  • 1/2 tea. vanilla
  • 1/2 lemon peel, grated
  • 1 cup sour cream
  • 1/4 cup sugar
  • 1/4 tea. vanilla
  • 12 graham crackers
  • 6 Tbsp. melted butter
  • 1/4 cup sugar

Preparation

Step 1

Preheat oven to 350 degrees.

Add graham crackers, sugar and butter in food processor. Pulse until combined., Remove and press graham cracker crust in bottom and sides of small glass mason jars.

Bake for 10-15 minutes, remove. Lower oven temperature to 300 degrees.

While crust is cooking, blend cream cheese with sugar until combined. Add pumpkin, egg, flour,m vanilla and lemon peel. Mix well and divide baster among small glass mason jars, filling each about 3/4 full.

Transfer jars to deep dish or pan and add boiling water to reach halfway up sides. Cover pan with foil, and cut slits in foil to vent. Bake for 55 minutes or until firm in the middle.

Blend sour cream, sugar and vanilla until combined. Add to top of cheesecakes and return to oven for 10 minutes. Cool completely.
