Olive Butter Mashed Potatoes

Ingredients

  • 2 lbs russet or yukon gold potatoes, whole
  • 1/2 stick butter
  • 1 cup hot milk
  • Salt & Pepper
  • 1/4 cup pitted kalamata olives
  • 1/2 stick butter, softened
  • 2 Tbsp parsley
  • 2 Tbsp cilantro

Preparation

Step 1

Cover potatoes with cold salted water; simmer 45 minutes. Drain, peel and mash with butter. Add milk, and salt & pepper to taste; mash until smooth and fluffy.
In a food processor; pulse olives, 1/2 stick butter, parsley and cilantro to make a paste.
Dollop olive butter over mashed potatoes.
