Baked Brie with Caramelized Onions

Ingredients

  • 2 tblsp. butter (1/4 stick)
  • 8 cups sliced onions (about 4 large)
  • 1 tblsp. minced fresh thyme
  • 4 cloves garlic, chopped
  • 1/2 c. white wine
  • 1 tsp. sugar
  • 1 8' diameter, 32-26 oz. French Brie, packed in box
  • baguette

Preparation

Step 1

Preheat oven to 350.
Bake 30 minutes.

1. Melt butter in a large skillet.
2. Saute onions until tender, about 6 minutes.
3. Add thyme, reduce heat to medium & cook until onions are golden, stirring often, about 25 minutes.
4. Add garlic & saute 2 minutes.
5. Add 1/4 c. white wine, stir until liquid is almost evaporated, about 2 minutes.
6. Sprinkle sugar over onions & saute until soft & brown, about 10 minutes.
7. Add remaining 1/4 c. wine, stir until liquid is evaporated, about 2 minutes.
8. Season with salt & papper. Cool. Can be made 2 days ahead. Cover & refrigerate.
9. Unwrap Brie, reserving bottom of wooden box.
10. Cut away top rind of cheese. Put back in box.
11. Top Brie with onion mixture.
12. Bake.
13. Serve with sliced baguette.
