Ingredients
- 1 pork shoulder roast about 4 lbs
- 1/2 to 1 tsp ground ginger to taste
- Salt and pepper
- 2 cups mango salsa
- 2 tbs honey
- 1/4 cup apricot preserves
- Hot cooked rice

Preparation
Step 1
1. Season roast with ginger, salt and pepper. Transfer to slow cooker.
2. Combine salsa, honey and preserves. Pour over roast. Cover, cook on low 6-8 hrs. Turn slow cooker on high for 3-4 hours longer until cooked through and tender. Serve over rice
