Pork Fillets w/Dark Cherry Sauce

Ingredients

  • 2 lbs. Pork Loin cut into 1/2"
  • fillets
  • Sprinkle with salt and pepper
  • Saute in oil till golden brown.
  • Add 1/2 c. beef broth
  • 1/4 c. bourbon to the pan.
  • Sauce
  • 1 17oz. can dark cherries, reserve the syrup.
  • Add 1T cornstarch to the syrup
  • 2 t. lemon rind
  • 2 T. lemon jui
  • 1 1/2 t. rosemary
  • 1/2 t. cloves
  • Bring to boil till thickened, remove the cloves, add cherries
  • and 1/2 c. toasted chopped pecans.

Step 1

Simmer the pork chops 10 to 15 minutes till pork is done, keep warm, then add sauce.
