Ingredients
- 1 tbsp Dijon mustard
- 1/4 cup real maple syrup
- 1/4 cup sherry vinegar
- 2 large shallots, minced
- 1/2 cup light olive oil
- juice of 1 lemon
- salt and pepper to taste
- salad greens (about 5 large heads of leaf or Boston Bibb lettuce)
Preparation
Step 1
In mixing bowl, combine mustard, syrup and vinegar. Add the minced shallots and proceed to slowly whisk in olive oil until emulsified. Add lemon juice and season with salt and pepper. Pour over rinsed and dried fresh leafy salad greens. Makes 1 cup of dressing.
