Strawberry Sweet Onion Gazpacho

We made this soup at Willowpark Wines and Spirits. From Route 40 Soup Company.

Serve with NV Champalou Vouvray Brut, Loire Valley France

Ingredients

  • 4 mint leaves
  • 1/4 cup thai basil
  • 3 cups sliced strawberries
  • 2 tbsp Jalapeno Jelly
  • 1/4 tsp pepper
  • 1 tsp salt
  • 1 tsp chili sauce
  • 2 cloves garlic
  • 1 1/2 cups thin sliced red onion
  • 1 tbsp butter
  • 4 tbsp port
  • 1 cup vegetable stock, cold
  • 1/4 cup yogurt

Preparation

Step 1

Part A:
Preheat 2 litre saucepan then add butter and stir it around until it melts. Once melted add red onion and garlic sauteed till translucent. Reduce to a medium heat then keep turning till onions start to turn slightly brown and soft. Once this point is reached, add port and chili sauce. Deglaze the pan.

Part B:
Once the pan is deglazed, add salt, pepper, thyme, strawberries and cook till slightly soft. Then add Jalapeno Jelly till softened. Remove from heat. Let cool.

Part C:
Once cooled, trnasfer to blender or container to use hand blender. Add basil, mint and 1/2 the stock. Blend till smooth. Then add the yogurt and blend some more till well mixed.

Serve chilled in shooter glasses.
