Sauteed Chard with Almonds and Dried Apricots

Prep tip: For a spicier version... substitute escarole for the chard & add crushed red pepper flakes.

Ingredients

  • 1 lg bunch (~12 oz) green or red chard, washed
  • 2 T EVOO
  • 1 small red onion, halved & cut crosswise into thin slices
  • 4 cloves garlic, minced
  • 1/4 c finely chopped dried apricots
  • 1/4 c sliced almonds, lightly toasted

Preparation

Step 1

1. Remove stems from chard.
2. Chop stems into 3/4" pieces.
3. Stack leaves & cut crosswise, ~ 1/2" wide.
4. In a lg skillet, heat oil over med-high.
5. Add onion & chard stems & saute for 2-3 min, until just tender.
6. Add chard leaves.
7. Using tongs, turn greens to coat w/oil.
8. Sprinkle w/sea salt.
9. Add garlic & chopped dried apricots.
10. Saute for 3-5 minutes, until chard is bright green & just tender.
11. Transfer greens to a serving dish.
12. Sprinkle w/toasted almond & serve immediately.
