Tuscan white bean soup

Ingredients
- 1 T. olive oil
- 1/2 cup chopped ham
- 1 c. onoin
- 3/4 c. chopped carrots
- 3/4 c. chopped celery
- 1 garlic clove, minced
- 1 c. water
- 2 (19 oz) cans white beans
- 2 bay leaves
- 1 (15 oz) can chicken broth
- 2 T. minced parsley
- 2 T. sherry
- 1/4 t. pepper

Preparation
Step 1
Heat oil in pan. Saute onion, celery, carrot and garlic. Add ham.
Add water, beans, bay leaves, and broth. Bring soup to a boil. Partially cover, reduce heat and simmer for 20 minutes until veggies are tender.
Right before serving add parsley, sherry, and pepper. Bring to a boil and cook a minute more.
*if you want to simmer longer, add extra liquid
