Ingredients
- 2 T. olive oil, divided
- 1 lb. sweet italian sausage (chicken)
- 4 gloves garlic, chopped
- 1 medium onion, chopped
- 1 bay leaf
- 1 T. sage
- 1 c. chicken broth
- 1 c. apple juice or water
- 1 c. pumpkin
- 1/2 c heavy cream
- 1/4 t. cinnamon
- 1/2 t. nutmeg
- salt and pepper
- 1 lb. penne cooked

Preparation
Step 1
Heat a large skillet
Add 1 T. oil and sausage to pan. Brown sausage. Remove from pan. Use remaining oil to saute garlic and onion.
Add bay leaf, sage & apple juice to pan. cook until liquid is reduced by half. Add stock and pumpkin, cook until sauce bubbles.
Return Sausage to pan. Reduce heat and stir in cream. Season with spices and simmer 5-10 minutes to thicken sauce.
Serve over penne warm.
