Ingredients
- 4 cups flour
- 3 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1/4 cup butter
- 1 cup raisins or currants
- 1 egg, beaten
- 1 and 3/4 cups buttermilk (can be substituted with 1-1/2 cups plain yogurt and 1/4 cup milk)
- 1 tblsp honey or molasses
Preparation
Step 1
Combine flour, baking powder, baking soda and salt. Cut in butter. Add raisins. Combine liquids separately. Add to dry ingredients. Mix until soft dough forms. Knead gently until smooth (approx. 3 minutes). Shape into two balls, flatten each and cut an X deep with a sharp knife. Place in round pans and bake at 375 degrees for 35 minutes.
