- 1 cup oats
- 1 cup flour
- 1/2 cup firmly packed brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 2 oz chopped walnuts (1/4 cup)
- 3/4 cup sour cream
- 3/4 cup whole milk
- 2 large eggs
- 1 tsp vanilla extract
- 2 bananas, ripe, mashed up
- 3/4 cup raisins
- 1/4 cup butter, melted, plus additional for skillet
- maple syrup or honey, for drizzling

1. Mix oats, flour, brown sugar, baking powder, baking soda, cinnamon, and walnuts in a medium bowl.
2. In another large bowl, combine sour cream, milk, eggs, and vanilla.
3. Whisk the dry ingredients into the wet until just combined, then fold in the mashed-up bananas and the raisins. Stir in the 1/4 cup melted butter.
4. Heat a griddle over medium heat and brush with additional melted butter. Pour about 1/3 cup batter for each pancake onto the griddle and cook until bubbles form on the top, about 2 minutes, then turn. cook until golden brown on the other side, about 2 minutes.
Very good, but made substantial changes: reduced sugar to 1/3 cup (and would probably go down to ¼ cup next time), added more cinnamon, left out the nuts, used light sour cream and skim milk, eggbeaters, only 1 banana, and chopped up the raisins (for Macy). Also left out the butter - unintentionally - just didn't notice it. And cooked up on a nonstick griddle without butter. Really very good!
