Pasta with Vietnamese Pesto

Ingredients

  • 1 pound spaghetti, or rice noodles, or angel hair
  • 1 1/2 cups chopped cilantro
  • 1/2 cup thai basil
  • 2 cloves garlic, halved
  • 1/2 teaspoon lemongrass, minced, or lemon zest
  • 1 jalapeno, seeded and chopped
  • 1 tablespoon fish sauce
  • 4 tablespoons chopped peanuts
  • 1/4 cup olive oil
  • 1/2 lime, in wedges
  • salt and pepper

Preparation

Step 1

1. Cook pasta.

2. In food processor, combine cilantro-fish sauce and 2 tbsp peanuts. Whirl until coarsely chopped. While machine is running, add in oil, then remaining peanuts and run until peanuts are coarsely chopped.

3. Toss with pasta.

Scrumptious. Used regular pasta, Thai basil, 1 jalapeno and cut way back on the oil (maybe 1/4 cup). Left off the lime and extra peanuts - just forgot. Delicious and a definite repeater. Would be great on pizza too.
