ITALIAN WHITE BEAN PUREE

  • 2 garlic cloves
  • 2 (15-oz) cans white beans such as cannellini, rinsed and drained
  • 1/3 cup reduced-sodium chicken broth
  • 1 tablespoon tomato paste
  • 1 1/4 teaspoon chopped rosemary, divided
  • 1/3 cup dry white wine
  • 2 tablespoons chopped pitted Kalamata olives, divided

Preparation

Step 1

Drop garlic into a food processor with motor running.

Add beans, broth, remaining Tbsp oil, and 1/4 tsp salt and pulse until smooth.

Add tomato paste and 1 tsp rosemary to olive oil in pan and cook, stirring, 30 seconds. Stir in purEE and 1 Tbsp olives and cook, stirring, until heated through, about 3 minutes. S
